When I was a child, my family used to go to this Asian restaurant that served this delicious coconut soup for dessert. A couple of years ago, we stopped eating there after they changed management. Their food wasn’t the same but I always remembered this dessert. By the time I decided to go back to give their food a second chance, I found out that they had closed. If you know me at all, then you know that I love dessert. In an attempt to spread the word about this delicious dessert, I turned to the internet to search for a recipe. A couple of key word searches later, and I was in my kitchen cooking what I hoped would be that same dessert from my childhood.
And guess what? It was just as I remembered!
It was light and refreshing, yet decadent from the creamy coconut milk. One might not assume that coconut milk would pair well with melon, but my goodness it does. You can find the recipe here, and give it a try for yourself! It is honestly even more delicious in the summer. Feel free to experiment with flavors. The original recipe used cantaloupe but I like watermelon better. It is also delicious with a combination of watermelon, cantaloupe, and honeydew.
