One of the things that I missed about Korea is sweet potato. Sweet potato was great treat for me when I was in Korea. However, I don’t really like sweet potato in America. Sweet potato in America is very different from that is in Korea. Korean sweet potato has deep yellow flesh and it’s much more sweet and soft whereas sweet potato or yam that I found in American has orange flesh and not as sweet. For this reason, I don’t usually buy sweet potato but I found Japanese sweet potato at Whole Foods. Fortunately, it’s similar to what I’m used to. If you could find oriental sweet potato, I highly recommend you to try it.
I like to experiment with foods and I’m not afraid of it. I decided to mix sweet potato and yogurt to make it like a parfait. This combination seems odd but it was actually very successful. I really enjoy eating it so I wanted to share with you.
First what you need is:
- Sweet Potato
- Any fruits you have. (I used apple, blueberry and grapes)
- Plain yogurt
- Soy milk (you can use any kinds of milk)
How to make:
- Prep fruits by cutting into small cubes.
- Steam sweet potato into boiling water for about 20 minutes.
- Mash sweet potato and
- Add milk into mashed sweet potato and mix well.
- Layer sweet potato, yogurt and fruit into the cup.
Here’s your sweet potato and fruit parfait. You can adjust this recipe, as you want with available ingredients. Creaminess of sweet potato and freshness of yogurt goes really well and fruits add sweetness to it. I put apple, blueberry and grape and I can taste every flavor of each fruit. It’s also very filling because of sweet potato so it can be great one meal.
