One of my new year’s resolutions is to eat healthy at home. When I was living with my family, I didn’t have to worry about my meal. My mom is a fantastic cook and she always cooked healthy delicious food. However, since I moved to New York and started to live by myself, I mostly eat outside. Even when I’m eating at home, instead of cooking full nutritious food, instant processed food has been go-to meals because they are quick and easy. However, several years of eating poorly, I have sensed bad signals that my body is sending. I assume this is not just my story. I decided to change my eating habits step by step. I will try to make proper food at home with fresh and healthy ingredients, instead of taking out foods from the restaurant and cooking instant foods.
When it comes to cooking, the simpler the recipe, the more likely I make it. Because of the reason, recipes I have tried the most are salad. Also, I don’t have to use a lot of cooking tools to make a salad. I don’t own a lot of cooking tools because I thought I would go back to Korea soon so I didn’t purchase cooking tools other than pot, frying pan and knife.
Today, I want to share my favorite simple and healthy recipe that I tried as my new year’s resolution. It’s a fruit salad. I learn this fruit salad from chef Sarah Carey.
What you need is
- Lime Zest/Juice
- Grate ginger
- Mint leaves
All you need to do is mix all these ingredients together. It’s good for light breakfast or for snacks. This is my favorite recipe because I can taste the sweetness of cantaloupe and blackberry and freshness of mint at the same time. Also, combination of lime and melon is really great. This salad has been great start of the meal for me. I always enjoy making and eating it.
