Happy Cinco De Mayo everyone! It finally feels like a true spring day with the sun shining and all the flowers blooming. The 5th of May seems to be celebrated across New York City with tons of guacamole and chips and pitchers of margaritas. As I was researching our final project, I came across some fun recipes to create in your own kitchen. Food Network has posted some light tasty dishes on their food blog, Healthy Eats. If you’re trying to start that summer diet now or just trying to stay healthy these are the recipes to live by!
The one I am most excited to try is “No Tortillas Tacos”. This spin on no tacos is created with leaves of butter lettuce where your choice of meat is stuffed inside. In this case, I am a huge chicken lover. I am planning on making this dish with lime infused grilled chicken, avocados, and the proper herbs.
Another one of my mexican favorites is fish tacos! Generally, fish tacos are deep fried. However, I am planning on grilling the fish to make the dish lighter. Last, but not least the guacamole. How can you not have a mexican fiesta without guacamole? Even though you’re trying to stay healthy and feel good, try opting out chips for veggies. You can serve the guacamole with carrot sticks, snap peas, celery, etc. Whatever you enjoy these dishes can handle your spin on it!
